3 large eggs, separated
1 tsp sugar
85 g unsalted butter, diced
285 g whole milk
225 g plain flour
1 tsp baking powder
1 tsp salt
1 tsp vanilla extract
Insert butterfly whisk, place egg whites and sugar in mixing bowl then whip 2 min/speed 4 until stiff peaks form. Set bowl aside.
In clean bowl: Place butter in mixing bowl and melt 2 min/70°C/speed 1. Add milk, flour, baking powder, salt, vanilla and egg yolks then mix 10 sec/speed 5.
Hand mix in egg whites. Pour into waffle iron, repeat.
