150g almonds
70g coconut oil
65g brown sugar -> 60g
85g honey -> 75g
1/2 tsp cinnamon
1/4 tsp salt
1 tbs vanilla extract -> 2 tsp
360g rolled oats
Optional: 75g raisins
Preheat oven to 150 degrees Celsius
Line large pan with baking paper
Measure almonds into Thermomix - 2 seconds speed 8. Pour out into a bowl and set aside.
Add coconut oil - 1 minute @60 degrees celsius speed 1.
Add brown sugar and honey - 4 minutes @100 degrees speed 2.
Add cinnamon, salt and vanilla extract - 30 seconds speed 2.
Add almonds and oats - 30 seconds REVERSE speed 2. Scrape down sides and repeat until mixed. Usually about 3 times does it.
Spread mixture onto lined baking pan. Cook for 25-30 minutes. Should be a bit toasted looking.
Every 10 minutes remove and stir well.
Measure raisins into cup on top of Thermomix.
With 5 minutes remaining stir in raisins (hold some back if desired for those who don't like raisins)
Let granola cool completely. Then break up and pour into air tight containers. Use within 3 weeks.
